- For the filling
- 150 grams raisins
- 75 grams Currants
- 50 grams chopped almonds
- 50 grams Candied lemon (finely chopped)
- 50 grams candied orange (finely chopped)
- 5 centiliters Rum
- 4 drops Almond extract
- 1 Vanilla bean
- 1 teaspoon grated Lemon peel
- 1 teaspoon grated Orange peel
- For the dough
- 1 cube Yeast (42 grams or approximately 1 1/2 oz)
- 50 grams sugar
- 100 milliliters lukewarm milk
- 300 grams Pastry flour
- 50 grams Marzipan
- 2 eggs
- 125 grams softened butter
- ½ teaspoon salt
- 200 grams Pastry flour
- 1 teaspoon butter (for the baking sheet)
Mix the filling ingredients well and allow to sit overnight.
For the dough, mix the crumbled yeast with the sugar and milk until it has dissolved. Add 200 grams (approximately 1 1/2 cups) of sifted flour and knead with the dough hook of the electric hand mixer to make a smooth dough. Dust the dough with flour, cover and let rise in a warm place until the surface of the dough shows cracks, about 20 minutes.
Cut the marzipan into small pieces, mix with the eggs, softened butter and salt. Mix with the remaining flour and knead thoroughly to make a smooth dough. Drain the soaked fruit filling and mix into the dough. Sprinkle with flour, cover, and let sit for 1 hour, until its volume has roughly doubled.
Preheat the oven to 180°C (approximately 350°F) and coat the baking sheet with butter.
Roll out the dough to a size of about 20 x 30 cm (8 x 12 inches). Roll the dough into a tube shape and press the seam to seal.
Place the dough on the greased baking sheet, slightly reshape, cover and let rest again for about 20 minutes, then place in the oven and bake for about 60 minutes. After about 20 minutes baking time, brush with some melted butter and repeat again 20 minutes later.
After a total of about 60 minutes baking time, check for doneness with a toothpick. Remove from the oven, brush with the remaining melted butter and let cool on a wire rack. Dust with powdered sugar, wrap in foil and let it sit overnight.
To serve, unwrap, lightly dust with fresh powdered sugar and slice.
