Christmas Beet and Herring Salad with Sesame Toast
Peel potatoes and cut into slices. Rinse and halve apples, core and cut into wedges, drizzle with lemon juice. Peel onions and cut into strips. Combine sour cream with mayonnaise and lemon juice, season with salt and pepper.
Cut herring into 3 cm pieces (approximately 1 inch) and combine with potatoes, apples and cream mixture. Coarsely chop beetrs and add to the salad. Refrigerate, covered, until ready to serve.
Whisk butter with sesame oil, season with salt and pepper. Spread bread slices with the mixture and sprinkle with sesame seeds. Toast in preheated oven at 200°C (approximately 400°F) for about 5 minutes. Cut out stars out of bread with a cookie cutter and serve with salad.
