Preparation steps

Set the chopped celery leaves aside and mix the chopped stalks with the lettuce, chicken, sweetcorn and pineapple in a large bowl.

Whisk together the honey, lemon juice and walnut oil and season with salt and pepper.

Gently mix the dressing into the salad and place in serving bowls. Garnish the salad with the reserved celery leaves.
