300 grams Pork cutlet
300 grams Pork liver
1 day-old White roll
100 grams freshly grated White bread crumbs
1 onion
1 egg
1 tablespoon Pastry flour
2 garlic
2 tablespoons freshly chopped Fresh herbs (Parsley, marjoram, lovage)
2 tablespoons butter
salt
freshly ground peppers

4 small slices Bacon
½ bunch scallions
2 tablespoons butter

Preparation steps

1.

Trim meat and liver and chop very finely (or grind in meat grinder). Peel onion and garlic and chop finely. Combine meat, liver, garlic and onion with soaked and well-squeezed bread, egg, flour, herbs and white breadcrumbs and season with salt and pepper. Shape patties out of the mixture. Heat oil in a pan and cook patties until golden brown on both sides.

Rinse scallions and cut diagonally into slices. Blanch in boiling salted water for 3 minutes then drain well. Heat butter in a pan and saute scallions briefly. Cook bacon in a hot pan until crispy.

Arrange liver steaks with scallions on plates and garnish with bacon.

Serve with mashed potatoes or potato salad, if desired.
