For the dough
½ cup softened butter
½ cup sugar
1 egg
½ Vanilla bean (seeds)
2 ¼ cups all-purpose flour
1 teaspoon Baking powder
cup milk
3 tablespoons cocoa powder
½ cup Almond flour
For the filling
cup butter
3 tablespoons sugar
7 ounces marshmallow cream (from a jar)

Preparation steps

1.
Heat the oven to 180°C (160°C in a fan oven), 375°F, gas 5 and line a baking tray with grease-proof paper.

Cream together the butter and sugar until fluffy. Add the egg and vanilla seeds and beat in well. Gradually sieve over the flour and baking powder, and work into a smooth sponge mixture together with the milk, cocoa and almonds.

Taking small portions of the mixture, place around 30 small mounds on the baking tray. Bake in the oven for around 15 minutes.

Take out of the oven and leave to cool.
5.
For the filling, cream the butter with the sugar until pale and creamy. Stir in the marshmallow spread and spread the mixture over the base of half of the biscuits (use a piping bag if desired). Sandwich each one with one of the remaining biscuits.
6.
Serve well chilled.
