6 ounces Dark chocolate
3 eggs
1 ounce sugar
1 pinch salt
8 ounces Whipped cream (at least 30% fat content)
1 tablespoon Whiskey

Preparation steps

Chop the chocolate and melt over a hot water bath. Let cool. Separate the eggs. Beat the egg whites with 1 pinch of salt until stiff. Beat the yolks with the sugar over a hot, not boiling, water bath until frothy.

Stir the egg yolk mixture into the chocolate and fold in the egg whites. Beat 150 ml / 1/2-cup of cream until stiff and fold into the mixture. Pour into 4 glasses and refrigerate for about 3-4 hours.

Beat the remaining cream until stiff just before serving. Stir in the whiskey. Garnish each glass with a dollop of cream and chocolate rolls. Serve cold.
