Preparation steps

Preheat the oven to 180°C (approximately 350°F). 

For the cake: Separate the egg. Beat the egg whites until tiff with a pinch of salt. Beat the yolks with the sugar until light and creamy. Mix the flour with the baking powder and fold into the egg yolks. Stir in the walnuts and fold in the egg whites. Transfer into a parchment-lined springform pan and bake for about 35-40 minutes.

For the chocolate cream: Separate the eggs. Beat the yolks with the sugar in a bowl over a pot of simmering water until frothy. Chop the remaining chocolate and melt into the egg mixture. Mix until smooth and cool slightly. Beat the cream with the powdered sugar until stiff. Beat the egg whites with a pinch of salt until stiff. Fold each into the chocolate cream and chill for at least 1 hour.

Remove the cake from the oven and turn out of the pan. Allow to cool on a wire rack. Once cooled, cut into two layers. Place the bottom half in a cake ring. Spread the chocolate cream on the rinse and place the second layer on top. Remove the cake ring and frost with the remaining chocolate cream. Dust the surface with cocoa powder. Garnish with walnut halves and cut into pieces to serve.
