Chocolate Waffles with Banana Yogurt

- 1 oz butter
- 1 Tbsp honey
- 1 egg
- 3 ozs Sour cream
- 3 ozs Pastry flour
- 1 Tbsp Oats
- 1 Tbsp cocoa powder
- 1 pinch Baking powder
- ½ cup
- 1 small ripe Banana
- 4 ozs Yogurt (low-fat)
Preheat the waffle iron. Put margarine and honey in a mixing bowl and beat until light and fluffy with a hand mixer.
Separate the egg. Beat yolk and sour cream into the honey mixture.
Whisk together flour, oats, cocoa powder and baking powder in another bowl and beat into the egg yolk mixture.
Stir in milk to make a smooth dough.
Beat egg whites until stiff, fold into the batter and cook 4 waffles in the heated iron.
Peel banana, put on a plate and mash finely with a fork. Mix with the yogurt in a small bowl until smooth and serve with the waffles.
