Wash the bottle and lid in hot soapy water, rinse well and put in a low oven to dry and become warm, then cool.

Preparation steps

1.
Heat the sugar and water in a pan until the sugar has dissolved. Stir until it comes to a boil, then boil without stirring until deep amber.

Remove from the heat immediately and add the cocoa powder, stirring vigorously. Add the cream and stir until blended. Add the chocolate and stir until smooth.
3.
Pour into a large glass sealable container. Add the vodka and vanilla pod and seal tightly. Shake vigorously.
4.
Keep in a cool dark place for 2 weeks, shaking every few days.
5.
Strain through a coffee filter set in a sieve into a cold sterilised bottle. Seal tightly and store in the refrigerator.
