Preparation steps

Heat cream in a saucepan. Chop dark and milk chocolate and place in a bowl. Pour hot cream over chopped chocolate and let chocolate melt with gentle stirring. Gradually stir in rum. Leave chocolate mixture to cool for about 3 hours. Cut butter into small pieces and stir gradually into chocolate mixture. Let mixture rest for about 2 hours. Place chocolate mixture in a piping bag with a large circle tip and pipe equal circles on parchment paper. Let chill at least 1 hour.

Meanwhile, toast pistachios in a hot dry skillet until fragrant. Let pistachios cool and coarsely chop.

Roll chocolate circles between hands rapidly to form into balls and roll in pistachios.
