200 milliliters Whipped cream
400 grams Dark couverture chocolate
1 Orange (organic)
1 teaspoon Orange liqueur
30 grams Dark chocolate 9with cocoa chips)
1 teaspoon Brandy
80 grams Marzipan
Amaretto (as desired)
40 grams powdered sugar
100 grams white Couverture
2 tablespoons cocoa powder
100 grams Dark couverture chocolate

Preparation steps

1.

Boil cream in a pot. Chop chocolate and add to cream. Stir until chocolate melts. Divide mixture into 3 bowls and let cool slightly.

Meanwhile, zest an orange. Combine zest and orange liqueur and stir into a bowl of chocolate. Chill for 2-3 hours.

Chop dark chocolate and stir with brandy into second bowl of chocolate. under the second third. Chill for 2-3 hours.

4.

Cut marzipan into small pieces and knead with powdered sugar and a few drops of amaretto. Shape into small beads. Cover and keep cool. 

5.

Put cocoa powder on a plate. Put minced white chocolate onto a plate. Put minced dark chocolate onto a plate. 

6.

If the chocolate mixture has reached the texture of butter, use a melon baller to shape into balls. Coat orange chocolates in white chocolate. Roll chocolate balls in cocoa and marzipan in dark chocolate. Chill. 

7.

Serve truffles chilled.
