7 ounces Whipped cream
9 ounces dark Couverture (50% cocoa)
7 ounces Milk chocolate couveture (30% cocoa)
2 tablespoons Cognac
7 tablespoons softened butter
powdered sugar (for coating)

Preparation steps

1.

Chop the chocolate and place in a bowl. Bring the cream to a boil, pour over the chopped chocolate and stir until melted. Gradually stir in the Cognac then let cool for at least 5 hours. Gradually stir the chopped butter into the ganache.

Transfer to a piping bag with a large plain tip and pipe into mounds on a piece of parchment paper. Chill for at least 1 hour then quickly roll into balls. Coat in powdered sugar to serve. Keep cool.
