For the Pastry
1 cup all-purpose flour
1 pinch salt
2 ½ tablespoons sugar
¼ cup butter (cold, chopped into small pieces)
1 egg
For the Mousse
5 ounces semi-sweet chocolate (70% cocoa, roughly chopped)
¼ cup Espresso
2 egg yolks
2 ½ tablespoons sugar
cup cream (30% fat, chilled)
To Garnish
2 ¼ cups Strawberries (rinsed and dried)
Chocolate curl (to garnish)

1 Cutting board, 1 Small knife, 1 Baking sheet, 1 Measuring cups, 1 Bowl, 1 Fork, 1 Small pot, 1 Slotted spatula, 1 Fine grater, 1 Tablespoon, 1 großer Pot, 1 flacher Pot mit Deckel, 1 Wooden spoon, 1 Small skillet, 1 Slotted spoon, 1 Whisk, 1 Large knife

Preparation steps

Heat the oven to 180C / 160C fan / 375F / gas 5.

To make the pastry, pour the flour onto a work surface in a heap, mix in the salt and sugar and make a hollow in the centre of the heap. Distribute the butter pieces around the hollow and crack the egg in the centre.

Cut all ingredients in using a knife until the mixture resembles breadcrumbs. Quickly knead to form a dough, roll into a ball, wrap in plastic wrap and chill for around 30 minutes.

Melt the chocolate with the espresso over simmering water. Remove from the heat and let cool.

Beat the egg yolks and sugar until thick and creamy and all the sugar has dissolved.

Whip the chilled cream until stiff.

Fold the chocolate into the egg yolk mixture.

Pour the whipped cream onto the chocolate and quickly but carefully whisk to combine.

Spoon the mixture into a piping bag with a large nozzle and place in the refrigerator to chill for around 30 minutes until beginning to firm.

Roll the pastry dough out on a floured work surface to about 4 mm thick. Cut out 8 rounds of 4" diameter, place on a cookie sheet lined with baking parchment and bake for 10-12 minutes until golden brown. Remove and let cool.

Chop some strawberries into slices and some into halves.

To serve, pipe a good half of the mousse neatly onto 4 pastry rounds and top with the remaining 4 rounds. Pipe the remaining mousse onto the top of the upper pastry rounds. Decorate the sides of the tartlets with the sliced strawberries and garnish the tops with halved strawberries and chocolate curls. Serve well chilled.
