Chocolate-Stuffed Dates with Chocolate Coating

These chocolate-stuffed dates are packed with antioxidants, which help protect the body's cells against free radical damage.

- For the filling
- 7 ounces Chocolate
- 3 ½ ounces Crème fraiche
- 3 tablespoons Cognac
- 1 tablespoon butter
- To cover
- 7 ounces Dark couverture chocolate
- 6 ounces Baking chocolate
- 2 tablespoons Palm oil
Preparation steps
For the filling: Finely chop the chocolate. Heat the creme fraiche in a saucepan, add the chocolate, stir in brandy and butter and heat just until the chocolate has melted. Cool slightly, the chocolate should not harden.
With cool hands shape the chocolate mixture into 40 small balls, and stuff into the dates, refrigerate.
To cover: Chop the chocolate and place in a heatproof bowl over a hot water bath along with the palm oil and melt. Set aside, stirring occasionally until cool. Arrange the work surface with baking paper or greaseproof paper and take the dates from the refrigerator. Spear the dates with a wooden stick and pull it through the melted chocolate, drain slightly and place on the baking paper to dry. Serve, or put the well-dried chocolates in paper cases and pack as a gift.
