Chocolate Shortbread Cookies
Beat the softened butter until fluffy. Stir in the powdered sugar, vanilla seeds, egg, brandy and cinnamon. Mix the flour, salt, baking powder and cocoa powder. Fold the flour mixture into the egg mixture.
Pour the dough into a piping bag with a large, star tip. Decoratively squeeze the dough onto a lined baking tray.
Bake for about 12 minutes at 180°C (approximately 350°F). Remove from the oven and let cool.
Crush the white chocolate and melt over a hot water bath. Place a small dot in the center of each cookie, let dry and serve.
