Chocolate Shortbread Cookies
Beat the butter until fluffy. Stir in the powdered sugar, vanilla seeds, egg, brandy and cinnamon. Mix the flour, salt, baking powder and cocoa powder. Fold the flour mixture into the butter mixture.
Pour the dough into a piping bag with a large, star tip. Decoratively squeeze the dough onto a lined baking sheet.
Bake for about 12 minutes at 180°C (approximately 350°F). Remove from the oven and let cool.
Crush the white chocolate and melt over a hot water bath. Place a dot of chocolate in the center of each cookie, let dry and serve.
