For the cookie dough
50 grams Dark chocolate
50 grams butter
150 grams Whole wheat flour
1 generous pinch Baking powder
1 generous pinch baking soda
1 tablespoon Cocoa
1 teaspoon cinnamon
25 grams sugar
1 egg
1 tablespoon milk (as needed)
To decorate
1 egg white
250 grams powdered sugar
Red Food coloring
8 light green Sugar pearls
Santa Claus Cookie cutter
small Piping bag (fitted with a plain tip)

Preparation steps


For the cookie dough: Chop the chocolate and melt in a small saucepan with the butter, stirring. Let cool. Combine the flour, baking powder, baking soda, cocoa powder, cinnamon and sugar. Add the butter-chocolate mixture and the egg and knead until smooth. Add a little milk, if necessary. Cover with plastic wrap and chill for about 1 hour in the refrigerator.


Preheat the oven to 180°C (approximately 350°F). Roll out the dough on a lightly floured work surface until 5 mm (approximately 1/8 inch) thick and cut out 4 Santa cookies. Arrange on a baking sheet lined with parchment paper and bake for about 12 minutes. Let cool.


For the icing: Whisk the egg whites and powdered sugar until smooth. Tint 1/3 with food coloring. Transfer the white icing to the piping bag and use to pipe the hair and beards. Use the red icing for the caps and add the green sugar pearls for the eyes. Let dry overnight before serving.
