Ingredients

For the dough

fresh Yeast (42 grams or 1.5 ounces)
200 milliliters
lukewarm Milk

melted Butter
2 tablespoons
Whipping cream (for brushing)

Preparation steps

For the dough: Sift flour into a bowl and create a well in the middle. Crumble yeast into well, mix with 3-4 tablespoons milk, 2 tablespoons sugar and a little flour from the edge. Cover and let rise in a warm place. Add all remaining dough ingredients and knead into a smooth dough. Cover and let rise for 45 minutes more.

Preheat the oven to 180°C (approximately 350°F).

Knead dough on a floured surface and roll out to about 2 cm (approximately 3/4 inch) thick.

For the filling: Combine cocoa, cinnamon and butter. Sprinkle cocoa mixture onto dough. Roll up from the long side, cover and let rest for about 30 minutes.

Place roll on a baking sheet lined with parchment paper and brush with cream. Bake for about 45 minutes.

Remove from oven, let cool briefly and transfer to a wire rack. Slice and serve at room temperature.
