125 grams Pastry flour (light, gluten free)
1 teaspoon cream of tartar
400 grams Raspberries
100 grams Dark chocolate
200 grams softened butter
150 grams cane sugar
4 eggs
2 tablespoons Rum
½ teaspoon cinnamon
125 grams Hazelnuts (ground)
1 pinch salt
100 milliliters Whipped cream

Preparation steps

Grease the pan and preheat oven to 200°C (approximately 400°F).

Rinse the berries. Finely grind the chocolate.

Beat the butter with the sugar until fluffy. Separate the eggs and gradually stir in the yolks. Mix together the flour, baking powder, rum, cinnamon, nuts and chocolate and stir into the butter mixture. Beat egg whites with salt until stiff and fold in. Pour half of the batter into the springform pan, spread raspberries over the batter (setting aside a few for garnish) and smoothly pour remaining dough over the raspberries. Bake for about 45 minutes. Let cool in the pan and serve garnished with remaining raspberries and a dollop of whipped cream.
