170 milliliters water (for a hot water bath)
60 grams powdered sugar
100 grams butter
220 grams dark Chocolate (70% cocoa)
2 eggs

220 grams Raspberries

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Grease a cake pan with butter. Mix the flour, cocoa powder and baking powder.

Melt the powdered sugar and butter over a hot water bath. Remove from the heat. Chop the chocolate and add to the powdered sugar, stirring until the chocolate has melted. Beat the mixture over an ice water bath until creamy. Separate the eggs. Beat the egg whites until stiff. Fold the egg yolks into the chocolate mixture. Fold in the flour mixture and the egg whites.

Pour 2/3 of the batter into the prepared pan. Setting aside a few raspberries for the garnish, sprinkle the remaining on the batter. Cover with the remaining batter and bake for about 50 minutes.

Remove from the oven and serve garnished with raspberries and powdered sugar.
