For the pudding
170 grams Dark chocolate
3 egg yolks
6 tablespoons sugar
50 grams cornstarch
800 milliliters milk
3 drops Almond extract
1 packet Vanilla sugar
For the orange cream
150 milliliters Whipped cream
2 tablespoons powdered sugar
2 teaspoons grated Orange peel
1 tablespoon Orange liqueur
For garnish
Orange peel
Almond slivers
Oranges
mint

Preparation steps

Chop the chocolate finely. Beat the yolks with the sugar and the cornstarch until creamy. Pour the milk in a saucepan, put in the chocolate, the almond flavor and vanilla sugar, boil slowly while stirring. Slowly stir the hot chocolate milk into the custard, pour back into the pot and lightly heat everything, stirring constantly, but do not allow to boil.

Remove the pan from heat and let cool slightly while stirring. Fill 4 small pudding molds (brioche molds, each 10 cm or approximately 4 inches in diameter) with the custard and allow to cool in the refrigerator. Whip the cream with powdered sugar until stiff and fold in orange zest and orange liqueur.

To serve, dip each mold in hot water and turn pudding out on a plate. Top with a dollop of orange cream and serve garnished with orange zest, almonds, orange wedge and mint leaves.
