500 grams Pastry flour (and some flour on the work surface)

200 milliliters
100 grams Cultured butter (at room temperature)
1 pinch salt
75 grams sugar
2 eggs
100 grams Orange marmalade
1 tablespoon Chocolate sprinkles (10 grams)

Preparation steps

Put flour into a bowl, make a well in the middle, mix together the yeast and milk and pour into the well. Sprinkle with a little flour from the edge, cover and let rest in a warm place until foamy, about 30 minutes.

Add butter, 1 pinch of salt, sugar and 1 egg and knead until the dough is smooth. Cover and and let rise for about 1 hour.

Roll out dough into a rectangle about 3 mm (approximately 1/8-inch) thick on a floured surface. Cut into 6 squares (each 18 x 18 cm/approximately 7 x 7 inches). Cut squares diagonally into triangles. Brush with orange marmalade and roll up from the long side. Place on a parchment paper-lined baking sheet and let rise for 15 minutes.

Separate remaining egg (save egg white for another use). Whisk egg yolk and brush over crescents. Bake in a preheated oven at 200°C (fan oven 180°C; gas mark 3) (approximately 400°F/convection 350°F) until golden brown, 20-25 minutes. Garnish with chocolate sprinkles and let cool before serving.
