300 grams Dark chocolate
50 grams mixed, candied Fruit (chopped)
50 Pistachio (chopped)
100 grams Pastry flour
50 grams butter
350 grams Marzipan
175 grams sugar
6 eggs
½ teaspoon Vanilla
4 tablespoons Apricot jam
10 Chocolate truffle (for decoration)

Preparation steps

1.

Line the bottom of a springform pan with parchment paper, grease edges with butter and dust with flour.

Combine 100 grams (approximately 3.5 ounces) of chocolate, candied fruit, pistachios and flour. In another bowl, combine butter and 100 grams (approximately 3.5 ounces) of almond paste, then stir in 50 grams (approximately 1.8 ounces) of sugar.

Separate eggs. Beat together all yolks and 4 egg whites. Stir egg mixture into butter mixture.

Beat remaining egg whites until stiff and beat in remaining sugar. Fold egg whites into batter. Combine vanilla, chocolate and flour and fold into batter. Pour batter into prepared pan, smooth the surface and bake in an oven preheated to 180°C (approximately 350°F) for 50-60 minutes. Removing and let cool in the pan for 15 minutes. Let cool, remove from pan, remove parchment paper and leave to cool on a wire rack.

Brush apricot jam onto cake.

Knead marzipan on a surface dusted with powdered sugar. Thinly roll out marzipan into a circle large enough to cover cake and sides.

Cover cake with marzipan and smooth sides.

8.

Place cake on a wire rack and then put on a baking sheet.

9.

Melt remaining chocolate over a double boiler and coat cake with melted chocolate. Add chocolate truffles and let set. Slice and serve.
