For the mousse
100 grams Milk chocolate
50 grams Dark chocolate
1 centiliter Rum
1 centiliter Walnut liqueur
1 teaspoon instant Coffee
2 tablespoons sugar
3 egg yolks
30 grams Vanilla sugar
200 grams chilled Whipped cream
2 tablespoons sugar
2 tablespoons finely ground, roasted Walnut

4 Walnut (chocolate covered)

Preparation steps

1.

For the mousse: combine chopped chocolate with rum and coffee. Melt over hot water bath and remove from heat.

Separate eggs. Whisk egg yolks with sugar and vanilla sugar over hot water bath until thick and frothy and sugar has dissolved.

Beat chilled cream until stiff.

Add egg yolk mixture to melted chocolate and whisk together, add walnut liqueur and ground walnuts. Fold in whipped cream. Pour into glasses and refrigerate for at least 2-3 hours. Garnish with walnut halves and chocolate chips. Serve.
