2 egg yolks
1 egg
40 grams sugar
2 centiliters Rum
150 milliliters Whipped cream
150 grams Raspberries
20 grams powdered sugar
mint (for garnishing)

Preparation steps

Melt chocolate over a hot (not boiling!) water bath. Whisk egg yolks, egg, sugar and rum until creamy over another hot water bath. Pour melted chocolate slowly into egg yolk mixture and beat in cold water bath until cold. Beat heavy cream until stiff and fold into chocolate cream. Pour cream into molds and freeze for about 3 hours.

Rinse raspberries, pat dry and set aside 8 berries. Puree remaining raspberries with powdered sugar and strain sauce through a fine sieve. Refrigerate.

Briefly dip ramekins into hot water and invert onto plates. Top each with two raspberries and mint. Drizzle plates with sauce and place wafer roll alongside mousse. Serve.
