Chocolate Mousse with Berries
Chop chocolate coarsely and melt in a metal bowl over a hot water bath while stirring. Remove from heat and cool.
Beat egg and yolk over a hot water bath until white and creamy. Remove from heat and add to the melted chocolate. Stir in rum.
Beat heavy cream until almost stiff. Stir in half quickly and gently fold in the other half.
Rinse berries and distribute into glasses. Pour chocolate mousse over them. Refrigerate for 2 hours. Dust with powdered sugar. To serve, garnish with extra berries and mint leaves.
