1 tablespoon strong Espresso
1 centiliter Cognac
2 fresh eggs
2 tablespoons Vanilla sugar
75 grams Whipped cream
25 grams sugar
4 teaspoons Chocolate shaving
4 teaspoons chopped Nut
4 Cherries (with stalk)

Preparation steps

1.

Coarsely chop the chocolate and melt over a hot water bath with the cognac and espresso. Remove from the heat.

2.

Separate the eggs. Beat the egg whites with the sugar until stiff. Beat the egg yolks with the vanilla sugar until fluffy. Beat the cold cream until very stiff.

3.

Add the egg yolk mixture to the chocolate and mix well. Whisk the whipped cream into the chocolate mixture before the mass solidifies.

4.

Gently fold in the egg whites.

Divide the mousse into bowls and cover tightly with foil. Chill for at least 3 hours in the refrigerator.

6.

Serve garnished with grated chocolate, chopped nuts and a cherry.
