4 egg whites
2 tsps lemon juice
1.111 cups caster sugar
2 ½ ozs Chocolate (finely grated)

Preparation steps

1.
Heat the oven to 140°C (120°C in a fan oven), 275°F, gas 1, and line a baking tray with grease-proof paper.

Beat the egg whites with the lemon juice to form stiff peaks. Gradually add the sugar and continue beating until you have a very firm, glossy mixture. Stir in the chocolate and carefully fold in the almonds.
3.
Spoon the mixture into a piping bag with a star-shaped nozzle and pipe circles with a diameter of 5 cm onto the grease-proof paper. Bake the meringues in the oven for around 30-40 minutes. They should be firm on the outside but still slightly soft in the inside.
4.
Cool on the grease-proof paper on a wire rack.
