- 4 eggs
- lemons
- 9 ounces very fine sugar
- 4 ounces ground almonds
- 2 tablespoons cocoa powder
- 3 ½ ounces Dark couverture chocolate
- 2 tablespoons Whipped cream
- 1 ounce butter
Preparation steps
Separate eggs. Squeeze juice from half of lemon. Beat egg whites with 2 teaspoons lemon juice until very stiff peaks form. Reserve egg yolks for another use. Sprinkle sugar gradually onto egg whites and continue beating until shiny and cut resistant. Fold in almonds and cocoa powder.
Place mixture into a piping bag with a large, round spout and pipe small circles about 3/4 inch in diameter on a baking sheet lined with baking paper. Bake in a preheated oven at 325°F, or convection 275°F, for 25 minutes. Leave the oven door slightly open.
Chop chocolate into small pieces. Melt gently over a hot water bath. Stir in cream and butter. Cool. Spread half of macarons with chocolate filling and top with other half. Serve.
