Preparation steps

For the cookies: Chop the chocolate coarsely and melt over a hot water bath. Remove from the heat and let cool slightly. Preheat the oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper. Cream the butter and sugar until fluffy. Gradually add the egg and vanilla sugar. Stir in the flour and baking powder until combined.

Slowly mix in the chocolate and coarsely chopped nuts. Spoon onto the prepared pan in small mounds, leaving room for spreading, flatten slightly and bake for 10-12 minutes, until golden brown. Let cool on the baking sheet for 5 minutes then remove and let cool completely.

For the mousse: Chop the chocolate coarsely and melt over hot water bath. Whip the egg whites and cream, separately, until stiff. Remove the chocolate from the heat, let cool slightly then fold in the egg whites.

Gradually fold in the whipped cream, transfer to a bowl, smooth the surface and chill for at least 1 hour in the refrigerator. Sandwich the cookies together with the mousse. Serve.
