Preparation steps

For the cookies: In a bowl, beat the butter with the sugar and 1 pinch of salt until creamy. Stir the chocolate, vanilla bean seeds and cinnamon into the butter mixture. In another bowl, stir the flour with the baking powder. Knead into the butter mixture along with the nuts, raisins and egg. Shape into a disk, wrap in plastic wrap and refrigerate for 1 hour.

Use a small spoon to divide the dough into walnut-sized pieces. Shape into balls with moist hands. Place 3 cm (approximately 1 1/4 inch) apart on a parchment-lined baking sheet. Bake in a 180°C (approximately 350°F) oven for 10 minutes. Remove from oven and allow to cool briefly.

For decoration: Coarsely chop the couverture and place in a bowl. Set over a pot of simmering water and stir until melted. Cut some of the macadamia nuts in half and chop the rest. Spread a teaspoon of chocolate on each cookie and sprinkle the chopped nuts overtop. Alternatively, dollop a small amount of chocolate on top of each cookie and place a nut half on top.
