Preparation steps

Beat the butter, sugar and a pinch of salt until light and fluffy. Coarsely chop the dark chocolate and stir into the butter mixture along with the vanilla bean seeds and cinnamon.  Stir in the flour, baking powder, chopped macadamia nuts and raisins and mix until smooth. Form the dough into a ball, wrap with plastic wrap and refrigerate for 1 hour.

Scoop the dough by the teaspoonful and roll into walnut-sized balls with moistened hands. Place about 3 cm (approximately 1 inch) apart on a baking sheet lined with parchment paper and bake in an oven preheated to 180°C (approximately 350°F) for 10 minutes. Remove from the oven and allow to cool.

Coarsely chop the dark chocolate and melt in a double boiler or heatproof bowl over a saucepan of simmering water. Cut half of the macadamia nuts in half and finely chop the rest. Place a small dollop of melted chocolate on top of half of the cookies and top with a halved macadamia nut. Dip the remaining cookies about halfway into the melted chocolate and sprinkle with the chopped macadamia nuts. Allow the chocolate to harden and serve.
