Chocolate Lava Cake
Brush the soufflé cups with butter and sprinkle with flour. Preheat the oven to 200°C (approximately 400°F). Chop the chocolate coarsely and melt in a bowl over a hot water bath, then cool to room tempearture. Blend the butter and melted chocolate until smooth.
Beat the eggs with the sugar until thickened and light in color. Stir in the chocolate-butter mixture. Sift the flour with the cocoa powder, then stir into the batter until smooth. Divide the batter evenly among the soufflé cups and bake in preheated oven for about 15 minutes. The center should still be liquid.
To serve, unmold the cakes onto dessert plates and dust with powdered sugar. Serve while the cakes are still hot.
