For the ice cream
250 milliliters milk
200 grams dark Couverture
60 grams sugar
3 egg yolks
1 sheet white gelatin
300 grams Whipped cream
For the chocolate sauce
2 Tbsps sugar
300 grams Whipped cream
75 grams dark Couverture
4 centiliters Orange liqueur
125 milliliters Orange juice
For the garnish
2 Kumquat
Orange peel (candied strips)

Preparation steps

Soak gelatin in cold water.

Boil milk.

Break chocolate into pieces and place in a bowl. Pour boiling milk over chocolate, stir until chocolate is melted and mix. Add squeezed gelatin to chocolate milk and mix all together. Allow to cool.

Beat egg yolks and sugar until pale and foamy, add to chocolate milk and let cool.

Whip cream until stiff and stir into cold chocolate mixture. Pour chocolate mixture into small dishes and put into the freezer for 3 - 4 hours.

For the sauce, dissolve sugar in a pan with 2 tablespoons of water and stir over low heat until light caramel in color. Add orange juice and liqueur and simmer until liquid is reduced to a third of the original amount. Boil chocolate and cream in a saucepan, stir in orange reduction and then let cool.

To serve, place chocolate ice cream on dessert plates (dip molds briefly in hot water to remove chocolate ice cream from dishes), cover with some sauce and halved kumquats. Garnish with candied orange peel and grated chocolate.
