For the chocolate hedgehogs
2 egg whites
1 pinch salt
150 grams sugar
250 grams ground almonds
¼ teaspoon ground Cardamom
1 tablespoon cornstarch
1 tablespoon Cocoa
1 tablespoon Apricot jam
60 grams Almond slivers
For decorating
200 grams Dark couverture chocolate
2 teaspoons vegetable oil
Parchment paper (for baking sheet)

Preparation steps

1.

For the chocolate hedgehogs: Beat egg whites with salt until stiff. Combine sugar, almonds, cardamom, cornstarch and cocoa. Mix with egg whites and apricot jam and knead into a smooth, pliable dough. Line baking sheet with parchment paper.

Divide dough into walnut-sized balls, lay on baking sheet and flatten slightly. Place almond slivers as hedgehog spines into the balls. Bake in preheated oven at 160°C (approximately 325°F) on center rack for about 15 minutes. Remove from oven, slide from baking sheet using the paper and let cool.

For decorating: Coarsely chop chocolate and melt with 2 teaspoons of oil in a bowl set over (not in) a pot of hot water. Coat hedgehogs with melted chocolate. Let them cool on a wire rack and serve.
