1 organic lemon
100 grams Hazelnuts (ground)
100 grams almonds (ground)
150 grams Pastry flour
1 teaspoon Baking powder
200 grams cocoa powder
For the garnish
200 grams Milk chocolate couveture
5 teaspoons butter
150 grams Almond slivers
Chocolate sprinkles (to sprinkle)
80 grams Dark couverture chocolate
Mocha bean (for the nose)

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Butter and flour five small pans of different sizes.

For the dough: Whip the egg whites in a large mixing bowl until stiff and chill.

Beat the butter in a large mixing bowl until creamy. Gradually add the sugar, egg yolks, salt, cinnamon, and lemon zest. Stir until smooth.

Mix the hazelnuts with the almonds, flour and baking powder. Spread the egg whites in a bowl and sift in the cocoa powder. Fold in the flour. Fold into the batter. Transfer the batter so that each pan is 3/4 full. Bake until golden brown for about 15-25 minutes, depending on the size. Turn the cake out onto a wire rack and let cool.

For the garnish: Heat the whole milk chocolate with 4-5 teaspoon of butter over a pot of simmering water. Spread over the cake. While wet, sprinkle the chocolate chips and almonds on the top to decorate as a hedgehog. Allow everything to dry slightly.

Melt the dark chocolate with 2 tablespoons of butter over a pot of simmering water. Transfer into a freezer bag and cut a small corner off. Pipe eyebrows and eyes. Stick the mocha bean as a nose with a small dot of chocolate. Let dry at room temperature.
