3 ½ ozs Milk chocolate couveture
6 tsps Palm oil

9 ozs sugar
3 egg whites (fresh)
6 sheets white gelatin
2 Tbsps dried Rose petal (organic)

Preparation steps

1.

For the shell, melt milk chocolate and palm oil over a hot water bath. Pour into heart molds to create a shell. Place in refrigerator to set. For the filling, boil sugar with 3.5 ounces of water.

Beat egg whites until very stiff and gradually stir in cooled sugar syrup. Soak gelatin in cold water for 10 minutes, place in a saucepan and melt over low heat. Stir into egg whites.

Grind rose petals in a blender to a fine dust and fold into egg whites. Remove heart molds from refrigerator and fill with the mixture. Place back in refrigerator for 45 minutes. Serve in bowls or give away in boxes.
