200 grams softened butter
100 grams powdered sugar
3 egg yolks
1 packet Vanilla sugar
1 Tbsp Orange juice
1 tsp cinnamon
175 grams Pastry flour
2 Tbsps cocoa powder
75 grams ground almonds
75 grams finely grated Dark chocolate
Pastry flour (for working surface)
125 grams dark Couverture

Preparation steps

Mix the butter with the powdered sugar until creamy. Beat in the yolks, vanilla sugar, orange juice and cinnamon. Combine the flour, almonds, cocoa and chocolate. Knead the flour mixture together with the egg yolk mixture into a smooth dough, wrap in plastic wrap and chill for about 30 minutes in the refrigerator.

On a floured surface, roll out the dough to be about 3 mm (approximately 1/8 inch) thick. Cut out heart shapes and place on a parchment paper-lined baking sheet. Bake on the center rack of a preheated oven at 180°C (approximately 350°F) for about 10 minutes. Remove from the oven, then remove the cookies from the baking sheet and let cool on a wire rack.

Chop the dark chocolate couveture and melt. Dip the heart cookies halfway in the melted chocolate, let drip-dry briefly and place on aluminum foil to dry.
