Chocolate Hazelnut Cookies
- 150 grams Mocha flavored chocolate
- 100 grams Dark chocolate
- 40 milliliters strong Espresso
- 150 milliliters Whipped cream
- 30 grams Hazelnuts
Pour out the flour, ground hazelnuts, sugar, vanilla and lemon zest onto a working surface. Make a well in the center and add the egg. Slice the butter and spread around the mixture. Mix all ingredients together and knead until a smooth dough is formed. Wrap in foil and chill in the refrigerator for at least 1 hour. Preheat oven to 180°C (approximately 350°F). Line a baking sheet with parchment paper. Sprinkle work surface with flour and roll out the dough to be about 4 mm (approximately 1/8 inch) thick, then cut out about 3.5 x 3.5 cm squares (approximately 1 1/3 x 1 1/3 inch) and place on a parchment paper-lined baking sheet. Bake in the preheated oven for about 12 minutes, or until golden. Remove and let cool.
Crush the chocolate and melt, then stir in coffee and whipping cream and chill in the refrigerator. Stir well and spread the frosting on each cookie. Serve garnished with a hazelnut gently pressed into each cookie.
