150 grams Dark chocolate
1 Pear

100 milliliters Grappa
4 sheets white gelatin
1 Vanilla bean
350 milliliters milk
1 packet vanilla pudding mix (for 0.5 liters or 2 cups of liquid)
40 grams sugar
1 packet Vanilla sugar
250 grams Mascarpone
For the decoration
12 white Grape

Preparation steps

1.

For the batter: Melt crushed chocolate over a double boiler. Remove from heat and let cool.

Rinse, quarter and core pear. Peel banana. Dice fruit and mix with lemon juice.

Separate eggs. Beat egg whites with 1 pinch of salt until stiff.

Dice butter and beat with sugar until foamy. Beat in egg yolks, then stir in melted chocolate.

Combine flour, almonds and baking powder, then fold into fruit mixture and add to batter. Fold in egg whites. Pour batter into a buttered springform pan and smooth. Bake in an oven preheated to 200°C (approximately 400°F) for about 25 minutes.

Remove from oven and let cool.

For the topping: Soak raisins in grappa. Soak gelatine in cold water. Cut vanilla bean lengthwise and scrape out seeds. Boil 300 ml (approximately 10 ounces) of milk and vanilla seeds. Whisk remaining milk with pudding powder, sugar and vanilla sugar until smooth. Stir into boiling milk. Add mascarpone and about 2/3 of the soaked raisins. Dissolve gelatine in a small saucepan and stir into topping. Spread topping onto cake, smooth and chill for about 3 hours.

For the decoration: Sprinkle cake with remaining drained raisins. Add grapes and serve garnished with gold leaf.
