Preparation steps

For the cake, in a saucepan, melt honey with sugar and butter while stirring. Set aside to cool. Mix together with the eggs and rum. Mix flour with baking powder, nuts and cocoa. Gradually fold into the honey mixture.

Spread batter into a lined baking tray about 1 cm (approximately 1/2 inch) thick. Bake in a preheated oven at 180°C (approximately 350°F) for 15-20 minutes. While the cake is still warm, cut in half crosswise. For the filling, chop orange peel very finely and mix with apricot jam and ginger. Spread one layer of the cake with orange mixture and place the other half back on top. With a sharp knife, cut into small rectangles.

For decorating, chop the whole milk chocolate into pieces and melt in a bowl over hot water. Coat the cake rectangles with melted chocolate and let harden on a wire rack.

Cover cakes with chocolate icing. Melt white chocolate and decorate the rectangles in a domino pattern with a small piping bag.
