Preparation steps

1.

For the filling, chop the chocolate and melt in a small saucepan with the cream and rum. Whisk until smooth. Crumble in the marzipan and stir until combined. Let set for at least 3 hours in the refrigerator.

Line a chocolate plate or a shallow baking dish, about 30 x 15 cm (approximately 11 x 6 inches) with plastic wrap. Line the bottom of the pan with shortbread. Once the cream is cooled, whisk once more and distribute 1/3 of the filling over the cookies. Place another layer of shortbread and repeat until there are three layers. Place a final layer of shortbread on top. Chill for 1 hour. 

Once cooled, chop both the dark and white chocolate separately. In separate bowls, melt each chocolate over a pot of simmering water. Lift the dominos from the pan and cut into cubes. Coat with the dark chocolate and drizzle with the white chocolate. Allow to dry thoroughly before serving. Serve at room temperature.
