Chocolate Dipped Strawberries with Cardamom

- 14 ozs Strawberries
- 2 generous pinches Cardamom
- 4 ozs Dark couverture chocolate (at least 72% cocoa)
Gently rinse strawberries in a sieve and pat dry.
Break cardamom pods, remove seeds and finely crush seeds in a mortar (or with flat side of a large knife).
Coarsely chop chocolate and place in a small heat-proof bowl. Add cardamom seeds.
Set bowl over a pot of simmering water and melt chocolate, stirring.
Dip each strawberry into melted chocolate.
Place dipped strawberries on waxed paper and allow chocolate to dry, then refrigerate until ready to serve.

Buy organic strawberries. Conventional products, especially in the early season, often contain high levels of harmful substances like pesticides or fertilizer residues. No Cardamom on hand? Try a pinch of cayenne or cinnamon, or forgo the spice altogether.
