Ingredients

For the dough
350 grams Pastry flour
80 grams sugar
200 grams cold butter
1 egg yolk
20 grams honey

50 grams Walnut
1 teaspoon cinnamon
1 teaspoon honey
2 tablespoons Whipped cream
2 egg whites
100 grams Dark couverture chocolate (60% Cocoa)

Preparation steps

Mix the flour and sugar, then pour into a mound on a work surface and make a depression in the middle. Cut the butter into pieces and place around the flour mound. Place the egg yolks with the honey in the middle, and knead everything quickly into a smooth dough. Wrap in plastic and let chill for half an hour in the refrigerator.

Meanwhile, chop the nuts finely and mix with the cinnamon. Mix the nuts into the cream, add the egg whites and refrigerate.

When the dough has cooled, preheat the oven to 180°C (approximately 350°F ). Roll out the dough on a lightly floured surface, and spread the nut mixture evenly over it. Bake in the preheated oven for 30-35 minutes. Cut into triangles, and let cool on a wire rack.

Chop the chocolate and melt in a double boiler. Dip the corners of each pastry in the melted chocolate, then let cool.
