Preparation steps

Preheat the oven to 200°C (approximately 400°F). Line a baking sheet with parchment paper. Finely chop the orange peel, cherries and raisins.

Simmer the honey with the butter, cream and sugar in a saucepan for about 5 minutes over medium heat, while stirring. Add the almonds and cook for another 5 minutes. Stir in the fruit and simmer for 3 more minutes.

Spread the honey and fruit mixture on the baking sheet about 1 cm (approximately 1/3 inch) and bake on the lower rack of the preheated oven for 12 minutes. Allow to cool, then turn the hardened mixture over onto a cutting board. Peel off the parchment paper and cut out round shapes with a cookie cutter or small glass.

Melt the crushed chocolate with the butter in a double boiler. Dip the bottoms of the cookies in the chocolate and allow to dry on parchment or wax paper, then drizzle the remaining chocolate over them. Allow to dry completely, then serve.
