- 50 grams Dark chocolate
- 100 grams Hazelnuts
- 140 grams Pastry flour
- 110 grams butter
- 2 packets Vanilla sugar
- 30 grams sugar
- 1 egg yolk
- 50 grams Dark couverture chocolate (for decoration)
- Gold foil (for decoration)

Place flour in a bowl. Dice butter and add to flour. Knead in remaining ingredients. Shape dough into a ball, wrap in plastic and chill for 1 hour.

Divide dough in half and shape each half into a log. Slice log into 1 cm (approximately 1/3 inch) thick slices. Shape into a small croissant and place on a greased baking sheet. Preheat the oven to 190°C (approximately 375°F). Place baking sheet in oven and bake croissants for about 15 minutes. Remove and let cool.
Chop chocolate and melt over a double boiler.

Dip each croissant halfway into chocolate and let dry on wax paper. Decorate with gold leaf and let it dry. Use remaining chocolate to decorate croissants, as desired. Let dry and serve.
