Chocolate Dipped Cookies
Preheat the oven to 200°C (approximately 400°F).
Melt the white chocolate over a double boiler and let cool.
For the cookies, beat the butter until smooth, then gradually stir in the eggs and sugar. Continue beating until the mixture is light and fluffy. Fold in the melted white chocolate. Mix together the almonds, flour and baking powder and fold into the batter. Fold in the grated chocolate. Spread the dough 1-2 cm (approximately 1/2 - 1 inch) thick on a baking sheet lined with parchment paper and bake for about 10-12 minutes (or until a toothpick is clean when removed). Remove from the oven and let cool slightly. While it is still warm, cut into diamonds, then leave the diamonds to cool completely.
Chop the dark chocolate and melt it. Dip the diamonds halfway into the melted chocolate. Allow to drip briefly, then wipe off the edge. Allow to dry on wax paper or aluminum foil. Before the chocolate is set, sprinkle with the sugar sprinkles and place a red sugar heart on each.
