Preparation steps

Preheat oven to 180°C (approximately 350°F). Line the wells of a muffin tin with paper cups.

For the batter, mix eggs, sugar and vegetable oil. Stir in chocolate. In a bowl, mix flour, baking powder, baking soda, a pinch of salt and cocoa powder. Sift flour mixture into egg mixture and stir in rum. Fill paper cups with batter until half full. Bake in preheated oven on the middle rack for about 20-25 minutes. Cupcakes are done when toothpick inserted in middle comes out clean. Carefully lift muffins from muffin tin and let cool on a wire rack.

For decorating, coarsely chop milk chocolate and melt in a double boiler over hot, but not boiling, water. Remove from heat and set aside to cool and stir occasionally.

Mix mascarpone and vanilla sugar. Mix cream until stiff  and fold into mascarpone mixture and place in a piping bag with a star tip and pipe decoratively onto cooled cupcakes. Place chocolate in a freezer bag and cut off a tiny corner and drizzle chocolate decoratively over cupcakes and let dry. Arrange cupcakes on dessert plates and serve.
