For the dough
1 egg
40 milliliters vegetable oil
75 grams sugar
1 pinch salt
50 grams Double cream cheese (60-75% fat)
120 milliliters Buttermilk
250 grams Pastry flour
2 teaspoons Baking powder
30 grams Cocoa
½ teaspoon baking soda
For decorating
100 grams Marzipan
30 grams Cocoa
For the filling
1 packet vanilla pudding mix
500 milliliters milk
3 tablespoons sugar
100 milliliters Whipped cream (at least 30% fat content)
For garnish
3 tablespoons powdered sugar (for dusting)

Preparation steps


For the dough: Preheat oven to 180°C (approximately 350°F). Place paper cases into the wells of a muffin baking tin. Combine egg with vegetable oil, sugar, a pinch of salt, cream cheese and buttermilk and mix well. Mix flour with baking powder, cocoa and baking soda in a mixing bowl. Quickly stir egg-yogurt mixture into flour mixture until all ingredients are moist.


Spread batter into the muffin cups and bake in preheated oven for 20-25 minutes. Remove from oven, cool, remove from the molds and cut in half horizontally.

For decorating: Meanwhile, mix marzipan with cocoa powder.

For the filling: Mix pudding powder with 3 tablespoons milk. Bring remaining milk with sugar to a boil, incorporate pudding, stir, bring to a boil again and let thicken.


Pour pudding into a bowl, sprinkle with powdered sugar and leave to cool. Whip the cream, fold into the cooled pudding and spoon into a pastry bag with star tip. Pipe onto the bottom layer of the cupcakes. Place the lid on top and garnish with shaved chocolate marzipan. Serve dusted with powdered sugar.
