For the dark chocolate cream
2 eggs
50 grams sugar
150 grams Dark couverture chocolate
100 grams Milk chocolate couveture
2 centiliters Cognac
200 milliliters Whipped cream
For the biscotti crumble
150 grams Biscotti
4 centiliters Coffee liqueur
For the white chocolate cream
100 grams white Couverture
150 grams Mascarpone
2 tablespoons Whipped cream

Preparation steps

For the dark chocolate cream: Separate the eggs. Whip the egg yolks with the sugar over a hot water bath until foamy. Chop the chocolate coarsely. Melt over a hot water bath, stir in the cognac and let cool slightly. Whip the egg whites to stiff peaks.

Whip the cream. Add the slightly cooled chocolate to the egg yolk mixture, mix well then fold in the egg whites and cream. Crumble the biscotti into 4 dessert glasses, sprinkle with the liqueur and spoon the dark chocolate cream on top.

For the white chocolate cream: Melt the chocolate over a hot water bath, let cool slightly then mix with the mascarpone and cream. Spoon over the dark chocolate cream and run a toothpick through the top to create a swirl pattern. Chill for at least 2 hours in the refrigerator. Serve chilled.
